How delicious is this! A stunning food special created by Ben H, a recent HITsa Cookery graduate, for the Parkside Hotel.
He describes it as
“Woodfire crispy duck leg, orange and carrot puree, pickle, red cabbage, herb oil kipfler potatoes and herbs”
Ben told us that the orange and carrot puree was a last minute change to the cauliflower puree shown in the photo.
We are so proud to be a small part of Ben’s culinary journey, which is destined for big things.
