Toshi runs for the Apprentice of the Year (SA Training Awards)
We recently farewelled one of our graduating cookery apprentices who smashed his training with the aim to qualify early and continue his culinary journey within the Matthews Hotel Group.
Due to this commitment and his obvious skills, the Matthews Hotel Group have submitted a nomination for Toshi as part of the SA Training Awards . Presented by the South Australian Skills Commission, the South Australian Training Awards shine as the state’s most prestigious awards program for recognising excellence in vocational education and training (VET).

I recently completed a Certificate III in Commercial Cookery through HITsa while undertaking my apprenticeship full-time at the Maylands Hotel—an award-winning venue that prides itself on quality produce, professional standards, and team culture. My journey into hospitality wasn’t planned. At the time, I was studying a Certificate II in Animal Studies and simply looking for casual work. When I saw a kitchenhand position advertised just ten minutes from home, I applied with the goal of earning a bit of extra income.
Since enrolling in my Certificate III in Commercial Cookery through HITsa, I’ve grown in confidence, professionalism, and skill. My training helped me develop a strong foundation across all core kitchen competencies, from prep to plating, with increasing responsibility during service. I’ve worked across every section, including pans, fryer, grill, larder, breakfast, and desserts. I’ve also taken the lead in running functions, where I oversee the full process—from preparation and timing to execution and final plating. These events have pushed me to plan ahead, manage time and people, and ensure every plate meets our venue’s high standards.
My training with HITsa has been a huge part of this journey. The quality of the training, combined with the real-world experience in a high-standard venue, has prepared me to take my next step with confidence. I’m proud to represent vocational training because it changed my life—and I know it can do the same for others.
We cannot wait to see if he takes out the top award which will be decided in August 2025
HITsa partnership to deliver SIT20421 Certificate II in Cookery
This month has been extremely busy behind the scenes with HITsa negotiating to deliver cookery training to secondary school students from the EASVA. The East Adelaide Secondary Vocational Alliance, established in 2019, comprising eight Department for Education schools. The member schools are -

- Adelaide High School
- Charles Campbell College
- Glenunga International High School
- Marden Senior College
- Marryatville High School
- Norwood International High School
- Open Access College
EASVA promotes vocational courses to Years 10 – 12 students to explore career pathways and commence accredited entry-level training in a variety of fields.
This program will kick off in June 2025 and will run from the state of the art kitchen at the Adelaide Botanic High School.

Congratulations to Anna
Anna F contacted us late January 2025 about our Certificate III in Community Services course at our Clarence Gardens site.
She had enrolled with another provider but they kept delaying the start date.
Anna was enrolled on 29 January 2025 and commenced her course on 31 January 2025.
Anna was a fantastic student. Always friendly and had completed her online activities prior to each class. Didn't miss a class and she successfully completed her course 23 May 2025.

Introducing Our New Student Data Specialist
We are excited to share that Karen Williams, one of our dedicated RTO Coordinators, has officially stepped into the newly created role of Student Data Specialist.
With over 25 years of experience in the RTO sector, Karen brings with her a deep understanding of training delivery, compliance requirements, and student support. Her transition into this new position reflects both her strong skill set and her ongoing commitment to process improvement and data quality.
In her new role, Karen will focus on managing and maintaining accurate student records, through Job Ready. She will also continue to support our internal teams to ensure a seamless student experience.
We are proud to see her growth within the organisation and look forward to the positive impact she will make in this new capacity.

Prepare and Serve Cocktails
A successful Prepare and Serve cocktails class completed at Clarence Gardens over 2 days.
Of the five participants in the class this unit was the final requirement for four of them who have now successfully completed their SIT30622 Certificate III in Hospitality.
Great fun was had by all in the group creating signature cocktails and cocktail menus.
Food Safety Supervisor course – Tailem Bend
HITsa will be delivering the Food Safety Supervisor course in Tailem Bend in early July, in conjunction with the Tailem Bend Community Centre. This skill set incorporates SITXFSA005 – Use hygienic practices for food safety and SITXFSA006 – Participate in safe food handling practices and is a South Australian regulatory requirement for any business that handles food. This is a fantastic opportunity for critical upskilling within the regional community. It is interesting to learn that the Tailem Bend Community Centre are currently preparing around 1000 meals for distribution to local households each week. The commercial kitchens in the community centre, and other Tailem Bend businesses will greatly benefit from the availability of local training for a regional workforce.

Meet the Student - Brydie
May 2025 saw HITsa training clients of Multiple Solutions in the course Get Ready for Cleaning Skill Set. Students attended the Salisbury site for seven days of training where they were taught about cleaning rooms, furniture and fittings, infection prevention and control and also how to provide effective client services. One of the students, Brydie shared her thoughts on her study experience:
- Tell me a bit about yourself and what course you studied?
Hi, My names Brydie, I'm 27 and I've always been passionate about helping others and creating calm, safe environments so I thought the cleaning and infection control course would be a good staple to have on my resume!
- What do you enjoy most about the course?
I enjoyed having friendly patient trainers who were always more than willing to stop and take time when someone was struggling, as well as other class members that were always down to help each other as well.
- What was the best thing about studying at HITsa?
The trainers and staff, as well as the calm and stress-free environment they've created for us to learn in.
- What are you going to be doing now that you have finished the course?
Hopefully I'll be attending HITsa in the near future to do more classes in other areas!

Into Jobs Hospitality / PEP Program Murray Bridge
Congratulations to all the participants who recently completed the hospitality/PEP Program run in conjunction with Into Jobs at Murray Bridge. The students were highly engaged, and enthusiastically leaned into the process of acquiring new knowledge, understanding and skills. Anyone having witnessed this enthusiasm, would be confident that all the graduates are now well placed to secure employment in the hospitality industry.
Work Placements in Childcare
For students out on work placements in childcare, it is not just all about the educational theory they learn in class. Their placements are full of unexpected realities of the industry, laughter, surprises and heart warming moments that stay with them long after the placement ends.
Students become unknowing:
Fitness Guru’s chasing toddlers, playing games, and tidying up toys can equal a gym workout!
Instant Role Models as the children look up to students as the new “cool” adult in their life, copying their words and actions at times hilariously!
A Database on how to answer a lot of curious questions, they also learn patience and adaptability while teaching children life skills.
Snack Time Pros, they quickly become experts in cutting fruit into fun shapes and how to negotiate with those picky eaters.
Creative Geniuses as they discover their inner storyteller, artist and musician capabilities that keep little minds engaged throughout the day.
Students communicate many different stories and how they have journeyed through their placement on completion. They cherish the bonds formed with the children and the staff and many say, “there’s nothing quite like the pride they feel within themselves when a child has finally bonded and made meaningful connections with them”.
Childcare Centre’s are continuously looking for trained staff as this growing industry continues to thrive.

HITsa is very excited to be sponsoring Adelaide Hockey Club for Season 2025.
Adelaide Hockey Club (“The Peas”) is one of the largest and most successful hockey clubs in South Australia with over 500 members playing both the Junior and Senior competition. The Club has teams participating in all Women’s Senior Divisions from Premier League through to M6 and has teams in Men’s Premier League, M1, M2, M4 and M5 grades. Juniors compete across all competitions from U8 through to U18.
Adelaide Hockey Club was formed in 1981 with the of Aroha Hockey Club and the Sturt Hockey Club. The Club is located on Greenhill Road. Facilities are shared with Tennis Seniors of SA and Pulteney Grammar School.
HITsa Mount Gambier Expo
HITsa Mount Gambier recently participated in the Limestone Coast Jobs, Skills and Careers Showcase at the Wulanda Recreation and Convention Centre, joining nearly 50 other organisations!
The event drew over 700 attendees, with a strong presence from local high schools across the region. It was a highly successful day, sparking strong interest in our new Mount Gambier site and providing a valuable opportunity to connect with future students and other local organisations.

Welcome Alison
We’re excited to welcome Alison Brown to the HITsa team in her new role as Work Placement Support Coordinator. Alison is already making a great impact by helping our Individual Support and Early Childhood Education and Care students get the most out of their industry placements.
Although based at our Clarence Gardens site, Alison is often out and about—visiting students, providing support, and conducting assessments as they complete their placement hours.

Universal Design for Learning
At HITsa, we are committed to making learning accessible and inclusive for every student. One of the ways we do this is by using the principles of Universal Design for Learning (UDL).
UDL is a proactive approach that helps us plan our training, assessment and support so that more learners can participate fully—right from the start. It helps remove common barriers to learning, creates a greater sense of belonging in the classroom and can also reduce the need for separate or individual adjustments.
While UDL goes a long way in supporting all learners, we understand that some students will still need extra support. Individualised help and reasonable adjustments are always available to make sure everyone has an equal chance to succeed.
