What's on in the kitchen?

Its been a big month with our chefs, and each of the cookery groups, with 3 courses rolling out across numerous sites and another about to commence!

The Adelaide Botanic High School is now rolling into month 4 of the training program and students are excelling with both theory and practical under the guidance of Trainer Emma M.

Emma has an impressive career within the industry and if you think she looks familiar you have probably seen her at Tasting Australia as she is a regular contributor to this annual event.

The Adelaide Botanic High School has an impressive hospitality set up so students are not only learning from one of the best but also have a state of the art commercial kitchen in which to hone their skills......

And HITsa will be back in 2026 to kick off another program at the School commencing Friday 30.01.2026. Places are limited to 15 so if you are interested get in touch via [email protected] or register your interest.

HITSA Inspires Mount Gambier High School Students with Hands-On Health Activities

HITSA Trainer – Karen Thomas recently visited a local Year 9 activity day to showcase careers in health and individual support. Students had fun playing games and “shaving” balloons to explore age and disability care. They even took real blood pressure readings!

Karen also shared how the Individual Support qualification can open doors to a variety of rewarding careers, giving students a glimpse into a field where they can make a real difference.

We look forward to seeing these budding health professionals grow and make their mark in the future!

From Truck Driver to Disability Support Worker

At HITsa, we’re privileged to witness the incredible journeys of our students as they take bold steps towards new careers. One such story is that of Mark, a 67-year-old former semi-trailer driver from the small country town of Parham. Mark’s journey is a testament to resilience, adaptability, and the power of lifelong learning.

After a workplace injury ended his 26-year career as a truck driver, Mark faced the challenge of finding a new path. With the support of his case manager from Konect, he decided to pursue a career in disability support. It was a daunting decision—Mark had never studied before, and the thought of sitting in a classroom all day was intimidating. But he took the leap, enrolling in our course at HITsa in Salisbury.

Mark’s initial apprehension soon gave way to a sense of purpose. “I found the course to be very informative,” he shared. “It opened up my mind and eyes to what I can achieve by working in the disability sector.”

As part of his training, Mark completed his placement at Tolly House in Hope Valley, working with individuals with paraplegia and quadriplegia. “The staff were very helpful in teaching me how to assist and empower the clients,” Mark said. It was here that he saw the practical application of his training and gained the confidence to step into his new role as a support worker.

Mark’s advice to others considering a career change or further study is simple but powerful: “For all you people wishing to study and take that step, please do it—you will never look back. GOOD LUCK AND ENJOY.”

RSG 1 (Basic Gaming) Training in Paringa

HITsa headed to the Riverland to deliver RSG 1 (previously Basic Gaming). This course is a mandatory requirement for all gaming employees commencing work who have not previously undertaken gaming training. HITsa is one of a handful of training providers approved by Consumer and Business Services to deliver this course in South Australia.

Into Jobs requested a program in the Riverland to assist in upskilling potential workers in the area, providing a required qualification for entry into employment in local venues. The 3 day program covered all of the required information and competency building, interspersed with lighter moments of laughter, as the group came together to learn.

All participants agreed that having completed their program they now feel better prepared to transition to work in the industry, and are hoping to secure jobs in the very near future. Special thanks to the team at the Paringa Hotel for their hospitality in hosting our training.

It’s Never Too Late to Learn!

Adult Learners Week is a great reminder that it’s never too late to grow, learn, and succeed—just like HITSA’s inspiring mature-age students.

Just one month into their Certificate III in Individual Support, Yolande, Stephen, and Tracy are proving that returning to study can be exciting and confidence-boosting!

Yolande hadn’t studied in over 20 years and admits she was “too hard on myself at first.” Now, she feels relaxed and supported:

“It’s a happy, positive atmosphere, and I’m enjoying challenging myself with something so exciting and new.”

Stephen finds some questions tricky but has loved connecting with others:

“I don’t really see many people outside of training, so it’s been amazing to meet others and see how much everyone helps each other.”


He enjoys sharing his passion for birds and gardening with classmates, adding to the supportive and friendly classroom vibe.

It’s been nearly 15 years since Tracy has studied and she thought she’d be “the shy one at the back of the class,” but she’s surprised herself:

“Everyone has been so welcoming and supportive. I feel like I’ve made the right decision.”


She’s now volunteering in practical sessions and enjoys laughing along with her classmates.

At HITSA, we’re proud to support mature learners as they gain confidence, build new skills, and take exciting steps towards a rewarding career.

Final 2025 Cookery Short Course Starting Soon

As the year rolls on HITsa has the last Cookery Skill Set open for enrolment and commences on 23 September 2025.

Chef David runs this course from our Gouger Street commercial kitchen over a three week period. David has more than 30 years experience within the sector and is currently working in industry so you can be sure that the skills you gain from this training will be up to industry standard.

This course is perfect for someone looking at employment options and not quite sure if the kitchen is the right fit for you.

Over a three week period you will learn kitchen basics including

  • Hygiene practices and safe food handling practices
  • Use food preparation equipment
  • Participate in safe work practices
  • Prepare dishes using basic methods of cookery

All of these units form part of the Certificate II and III in Cookery and will only cost $70 if you meet the State Government eligibility criteria.

With the warmer weather on its way there will be a huge surge of job vacancies over the coming months......

And the best bit - you get to eat all the amazing food you prepare.......

A Taste of Togetherness: Spur of the moment Shared Platter

What started as a spontaneous “I’m hungry” moment, quickly turned into a relaxed and well-organised kitchen gathering at HITsa Salisbury. We knew classes would begin to break for lunch within the hour, so had to move swiftly, to pull this off so we didnt impose on the students' breaks. In less than 15 minutes, the team rallied together to create a vibrant food platter filled with fresh fruit, cheeses, and savoury bites.

This simple act of sharing sparked laughter, lively conversations, stories from both past and present plus plenty of good-natured banter. It was a great reminder of the value in slowing down and enjoying the company of those we work with.

Salisbury Business Awards 2025

And the winner of the Salisbury Business awards in the category for Best Training/Employment Services Award was…

Unfortunately, not us this year, but that won’t stop us from entering next year and continuing to promote HITsa as a fantastic place to do training! Still, it was a lovely evening at the Salisbury Hotel for Sarah, Amanda, Jeanette and Cindy. It was a good opportunity to learn about other local businesses and the diversity that makes up the Salisbury business community. It was also interesting to learn that a large percentage of the businesses in Salisbury are owned by families – just like HITsa.

Desert was supplied by a local, family-run business and it was delicious!

My introduction to the other HITsa sites

As a relatively new employee based at the Clarence Gardens location I had not had the opportunity yet to visit our other locations since commencing my employment with HITsa.

This month I was lucky enough to visit our Salisbury and Mount Barker locations.

It was a great trip and so informative to see the set up in different locations and sizes of office training spaces as well as see the staff in person rather than virtually.

RTO Coordinator Team Building Day

Recently, our RTO Coordinators came together for a team building day – a chance to step away from the usual routine and spend time connecting with one another.

The day was filled with laughter, plenty of teamwork, and activities that reminded us how much stronger we are when we work together. It was great to see everyone’s different strengths shine through, whether it was problem-solving, creative thinking, or just keeping the energy high.

Most importantly, the day gave us the chance to get to know each other better, build trust, and walk away feeling more connected as a team. We left with fresh energy, stronger bonds, and a shared commitment to supporting one another in the work we do every day.

A big thank you to all our coordinators for bringing such great spirit to the day – you made it a success!
