Cooking Up a Big Year of Cookery Training!
We’re turning up the heat in 2026! With more cookery programs than ever before, this year is all about giving aspiring chefs, food lovers and hospitality newcomers plenty of chances to get hands-on in the kitchen. From entry-level experiences to nationally recognised qualifications, we’ve got a packed menu of cookery training ready to serve—so there’s never been a better time to jump in and start cooking up your future.
VET in school options
We have the Certificate II in Cookery SIT20421 ready to kick off led by Chef Emma McCaskill at

And then Chef Adam Dennis will be running the same program at

We also have a range of courses running from our Commercial Kitchen located in Gouger Street which will be headed up by Chef David White including
Certificate II in Cookery - an intensive training program running in blocks and covering a vast range of cookery techniques and styles for those already working in a kitchen or keen to develop this into a career
Basic Skills for the Food Industry Skill Set - a short 3 week course designed for those who are not sure whether cookery is their thing, which will also give you some fantastic skills and recipes that work just as well at home as they do in the workplace
Certificate III in Cookery (apprenticeship training options) - block release - throughout the year
The Limestone Coast is not forgotten. We will also be running a Basic Skills for the Food Industry Skill Set in Mount Gambier which will be hosted by Chef Kirby Shearing at Elementary by Soul!

AtWork Australia Hospitality Training: From Skills Development to Employment Pathways
Last week, HITsa delivered an intensive hospitality training program for AtWork Australia participants, focused on building practical, job-ready skills and confidence.
Participants completed their Food Safety certification and developed essential skills including barista basics, customer service, mastering Point-of-Sale, communication, order taking, and café style table service. The hands-on approach was a highlight for many, with participants sharing that “the best aspects were the hands-on training and an amazing trainer”, and that the trainer’s positive attitude made a real difference. Coffee making, safety and hygiene, and learning how to work effectively were also frequently identified as key strengths of the program.
All participants successfully completed the program, demonstrating strong engagement, practical skills development, and growing confidence over the course of the week. It was rewarding to see their confidence increase as they applied new skills in a practical setting.
The participants are now prepping to meet with Rory’s Group Australia on Thursday to explore employment opportunities within school canteens across Adelaide. We wish them all the very best as they take the next step in their employment journey.

HITSA Mount Gambier Turns One!
We recently celebrated a very special milestone at HITSA Mount Gambier – our 1st birthday!
And what better way to mark the occasion than having morning tea with our amazing Health class, who helped make the celebration extra memorable.
Over the past 12 months, HITSA Mount Gambier has grown into a strong and supportive training community, delivering quality education, skills development, and pathways into employment. It has been incredible to see the enthusiasm, dedication, and achievements of our students, and we are so proud of everything that has been accomplished in such a short time.
The day was even more special as it also marked our fabulous trainer Sandra’s 1-year anniversary with HITSA! Sandra has been an integral part of our success, bringing passion, knowledge, and genuine care for her students into every class. We are so grateful for her hard work and the positive impact she continues to have on our learners.
A huge thank you to our students, trainers, partners, and community for your ongoing support. Here’s to an amazing first year and to many more milestones ahead for HITSA Mount Gambier!
Barista training wherever you need us!
HITsa is excited to share the news- we now have a Coffee HIT that can come to you, anywhere in SA.
Fully equipped with everything needed, including 2 commercial coffee machines and grinders, coffee beans and serving ware. HITsa’s amazing barista trainer will wheel the equipment inside your training room, allowing any suitable* venue to be instantly transformed into a café for barista training, all you need to bring are the participants.
Your choice of accredited and non-accredited courses, or create a program to meet the specific needs of your cohort. Our qualified barista trainer will provide an engaging, hands-on training course for up to 12 participants at a time.

Individual Support Traineeships with HITsa Training and ACA
We are proud of our ongoing partnership with Apprenticeship Careers Australia (ACA) to deliver CHC33021 Certificate III in Individual Support Traineeships.
This partnership provides individuals with an incredible opportunity to gain a nationally recognised qualification while working in the industry.
Traineeships with ACA (part time 15 + hours per week) are a fantastic way to earn while you learn, combining hands-on experience with practical training to build the skills and confidence needed for a rewarding career.
Whether you’re looking to start a new career, upskill, or re-enter the workforce, traineeships are designed to set you up for success in the growing aged care and disability support sectors.

Make a Difference with the CHC32015 Certificate III in Community Services

Keeping Our Students Safe: Early Departure for Minors
At HITsa, the safety and wellbeing of our students is always our top priority. As part of our duty of care, we have clear procedures in place for students under 18 to ensure they remain safe while attending training - if you are under 18, you are required to stay onsite and supervised until the scheduled finish time of your class.
All HITsa classes have a scheduled finish time, and students who are under 18 are required to remain onsite and supervised until that time. Even if a class finishes early, minors must stay at the training site until the scheduled end of the session. During this time, trainers will provide supervised learning activities such as project work, research tasks, or assessment catch-up activities.
If a minor needs to leave class early, this must be raised with the Trainer at the beginning of the session wherever possible. Early departure is not automatically approved. HITsa staff must first contact the student’s parent or guardian (or emergency contact) to obtain permission before a student can leave. If we are unable to make contact, the student will remain in training until the scheduled finish time.
Parents, guardians and students are reminded that leaving without permission is taken seriously.
We appreciate the cooperation of students and families in supporting these procedures. By working together, we can ensure a safe, supportive and well-supervised learning environment for all young people at HITsa.

Cleaning Short Course
Want to develop your practical skills and learn the basics for a position within the cleaning sector? Then this course could be for you.
This is a hands-on course that takes you through the basics including:
• How to clean rooms and bathrooms
• How to apply hygiene and infection control
• Delivering effective client service
• How to follow workplace safety practices
While undertaking this Cleaning Short course you will complete the following units of training:
Clean rooms furniture and fittings
Clean and maintain amenities
Provide effective client service
Apply infection prevention and control procedures to own work activities
Use hygienic practices for food safety
Participate in safe food handling practice
Once you have completed this course there are various employment areas that you could apply to work in, including housekeeping, commercial cleaning, domestic cleaning, kitchen work and even customer service.
Salisbury will be running the next course on 16th February 2026; Clarence Gardens will be offering the course in May 2026.
